Making Crab Apple Jam with Local Nova Scotia Ingredients

Ingredients:
2 lbs crab apples, washed and cored
3 cups sugar
1/2 cup water
Juice of 1 lemon
Instructions:
Cut the crab apples into quarters, leaving the skin on.
In a large pot, combine the crab apples, sugar, and water.
Cook over medium heat until the crab apples are soft and the mixture thickens, stirring occasionally. This should take about 30-40 minutes.
Remove from heat and let cool for 10 minutes.
Use an immersion blender to blend the mixture until it's smooth.
Add the lemon juice and stir to combine.
Pour the mixture into sterilized jars and seal.
Store in the fridge for up to 3 months.
This delicious jam is perfect on toast or as a topping for yogurt or ice cream. Enjoy!
